Syrup: Boil 150 ml of water with 500 g of refined sugar for 2 minutes or to the point of string. 

Preparation: In a bowl, place 65 g of high performance meringue powder and 150 ml of water, hydrate for 5 minutes. 
Then beat at high speed for 6 minutes, lower the speed and incorporate the syrup little by little. Increase to maximum speed for 9 minutes.
